We had another interesting year producing Maple Syrup. No syrup was produced locally in February, the first time in 25 years due to the cold temperatures we experienced. We boiled our first sap March 11 and then again on the 15th, 17th, and then not again until March 26. After the 30th of March we boiled just about every day until April 19. We produced about the same amount of sap as last year but more and better syrup. The sugar content of the sap was the highest I have experienced. Some local sugar makers attribute that to a dry fall, not allowing for much water in the ground.
When I am asked about the season, I tell people I'll have a better idea come May 1!
